Tonight I tried a new recipe from Thug Kitchen. And OMG…these were SO yummy! I made Roasted Chickpea & Broccoli Burritos. Now…before I post the link I have to give a disclaimer…this website is not for the easily offended as there is some bad language on the site. I myself found the recipes hilarious, but some may be offended. So please take this as your warning before clicking the link.
Here are some of my burritos before I rolled em’ up! Like I said…SO yummy! I did change some things, like I used an entire lime, added garlic salt, and used a yellow bell pepper since the red ones were looking sketchy in the supermarket.
Chop up the onion, bell pepper, and broccoli so that all the pieces are about the size of a chickpea.
Chop up the garlic, set aside.
Place all the chopped veggies in a large bowl with cooked chickpeas.
Pour in the oil and soy sauce, stir.
Add all spices and mix well until all the vegetables are covered.
Place on a large rimmed backing sheet (can line with foil) and bake for 20 minutes.
Take out of the oven and add the garlic and bake another 15 minutes.
The broccoli may look a little burnt, but that is okay. Take the cookie sheet out of the oven. Squeeze the juice of half a lime over everything and mix well. Taste and see if it needs any additional spices or lemon juice.
Make a burrito!
You can add spinach, avocado, cilantro, or salsa. Pick what you would like to add. This tastes amazing just as it is also. I used a red onion because I did not have any yellow.
And…I can not believe I have completed the 30 days of burpees. I am glad that my gym buddy Mike convinced me to do it and MORE importantly how supportive everyone at the gym was! They would join in the burpees if they were there with me! That is support! Not even needing to do it and they did it anyway! In fact, they all joined to help me do 170 burpees today! THE FINAL DAY! I am not going to lie, I was thinking about calling it quits until I saw this on the board at the gym:
(Ya…Mike is an overachiever…he did 211 today and he always added plus 1 to whatever the number was…)
And in true foodie fashion (Mike and I both enjoy a good meal or dessert) we of course celebrated with a treat. No challenge is complete without a reward! So what did we have? Oreo-Stuffed Chocolate Chip Cookies! OH YA! We deserve it! After all, in the 30 days we did 2,750 burpees!
Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
Add butter and sugars and beat until light and fluffy. Then add the eggs and vanilla and beat until combined.
In a large bowl, sift the flour, salt, and baking soda with a wire whisk until combined. Slowly add the dry ingredients and mix until combined. Add the chocolate chips and mix until combined.
Use an ice cream scoop to place a scoop of cookie dough on top of an Oreo cookie. Place another scoop on the bottom of the Oreo. Seal the edges together by pressing and cupping the dough in hand until the Oreo is completely enclosed. Shape into a thick patty. Repeat with remaining cookies and dough.
Place the stuffed cookies on the prepared baking sheet a couple of inches apart and bake for 11-15 minutes, until the cookies are cooked through. Let cool for 5 minutes and transfer to a cooling rack.
Be gently when forming the dough balls, you don't want to break the Oreo.
